Ingredients

  • 2 lbs Boneless, skinless chicken breast tenders

  • 1½ cups Fresh pre-sliced yellow onions

  • 2 cups Fresh pre-sliced bell peppers (or frozen blend)

  • ¾ cup Jarred chunky salsa (mild, medium, or hot)
  • 2 packets Fajita seasoning mix (1.4 oz each)
  • 16 Flour tortillas (10-inch)
  • ½ cup Bagged pre-shredded Mexican cheese
  • ½ cup Pre-diced fresh tomatoes (or drained petite canned)
  • ¼ cup Prepared guacamole (individual cups easy open)
  • ¼ cup Sour cream (squeeze bottle recommended)

Helpful Equipment

• 5-6 Qt Slow Cooker
• Kitchen Scissors (for package snips)
• Non-slip mat (to stabilize slow cooker)
• Optional slow cooker liner for zero scrubbing

Preparation Steps

  1. Set Up the Slow Cooker
    Place the slow cooker on a stable countertop where it can remain for the entire cooking period. If using a slow cooker liner, fit it into the insert now.
    Adaptive Tip: Never move a slow cooker once it is hot or filled with food.
  2. Add Chicken & Pre-Sliced Vegetables
    Use kitchen scissors to snip open the chicken tender tray and place tenders directly into the bottom. Pour pre-sliced onions and peppers directly over the chicken.
  3. Add Sauce & Seasonings (No Mixing Bowl)
    Pour the jarred salsa directly over the chicken and vegetables. Snip open the fajita seasoning packets and sprinkle directly into the slow cooker. Gently distribute with a spoon.
  4. Slow Cook Unattended
    Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken reaches 165°F.
  5. Finish & Serve
    Gently stir with a long-handled spoon. The tender chicken will naturally break into narrow strips. Stack tortillas on a plate, cover with a damp paper towel, and microwave for 20 seconds.
    One-Handed Tip: If folding tortillas is difficult, serve in a bowl over cauliflower rice or with torn tortilla pieces!
