How to Prepare & Cook
-
Gather & PrepBefore cooking, bring all ingredients, your lightweight skillet, and your cooking utensils to your seated prep station. Using the can opener, open the beans and leave the lid resting on top. Drain and rinse the beans in a small colander placed in the sink. Keep the pre-cooked rice packets near the microwave.
-
Seated Station SetupFrom your seated station, arrange all of your pre-measured ingredients (mushrooms, drained beans, edamame, garlic, teriyaki sauce, and oil) around your cooking burner. If you are using a portable induction cooktop, ensure it is safely positioned on a heat-resistant surface in front of you.
-
Sauté MushroomsHeat the oil in your skillet over medium heat. Once the oil is warm, add the pre-sliced mushrooms and minced garlic. Sauté for about 5 minutes, stirring occasionally with a lightweight spatula, until the mushrooms are softened and lightly browned.
-
Add Beans & SauceAdd the drained black beans and frozen edamame to the skillet. Pour the teriyaki sauce over the mixture. Stir to combine and cook for another 3 to 4 minutes, allowing the sauce to slightly thicken and coat the beans and mushrooms.
-
Heat the RiceWhile the skillet simmers, place the pre-cooked rice packets in the microwave and heat according to the package directions (usually 1-2 minutes).
-
Plate & ServeTurn off the heat under the skillet. Carefully open the microwave rice and portion it into two serving bowls. Top with the warm teriyaki mushroom and black bean mixture. Allow it to cool slightly before eating.
