GuadalaHARRY’s Leftover Revival: Crispy Shrimp Brochette Burritos
This recipe started with a special reunion lunch with my longtime friend and former boss, Roger, at one of my favorite restaurants, GuadalaHARRY’s Bar & Grill. I brought home leftover shrimp brochette, crab cake, Mexican rice, and butter dip, and the next day transformed them into crispy freezer-friendly burritos. With kitchen shears, an automatic can opener, and a few simple shortcuts, those restaurant leftovers became an entirely new meal. Explore more effortless meals in our weekly favorites collection!

How to Prepare & Freeze
-
Snip & Chop LeftoversUsing kitchen shears, snip the leftover GuadalaHARRY’s bacon-wrapped shrimp brochette and crab cake into bite-sized pieces.♿ Adaptive Tip (Contained Prep): Place the deep pan inside a thoroughly cleaned and sanitized sink basin while adding ingredients if that gives you a lower, more stable work area. Keep all food inside the pan rather than directly contacting the sink.
-
Scramble Skillet FillingAdd the seafood pieces, leftover Mexican rice, and a splash of the restaurant’s melted butter dip to the pan for pan lubrication. Snip open the frozen vegetable bag and taco seasoning packet, adding them to the skillet along with the green salsa verde and cartoned egg substitute. Stir and cook over medium heat until the eggs are fully scrambled.
-
Spread Refried Beans & FillOpen the canned refried beans using your automatic one-handed can opener (press the button and let the magnet lift the lid). Lay out your burrito-sized tortillas, scoop a small amount of beans, and spread a thin layer across the bottom of each tortilla before adding the warm egg and seafood scramble.♿ Adaptive Tip: Layering refried beans first anchors the filling and gives it an authentic Mexican restaurant texture while helping bind the wrap.
-
Roll BurritosTo roll: clamp the two bottom ends upward together, fold the side over the top, and give two gentle rolls to form a secure, tight burrito.
-
Air Fry to Crisp PerfectionPlace burritos on a lined air fryer basket (using a liner for effortless cleanup). Spritz lightly with aerosol oil spray. Air fry at 360°F for 13 minutes until golden and crisp.
-
Cool & FreezeCool the burritos completely, place them in freezer bags, press out as much air as comfortably possible while the bag rests flat on the counter, and seal securely. Freeze for effortless future meals!♿ Ready to Eat: When hungry, pull a burrito from the freezer, pop it back into the air fryer to reheat until piping hot, and serve with salsa.
